Gingerbread biscotti & another easy dinner (Celebration #7)

Today was a good day (and free of medical procedures! no blood draws!). I couldn't sleep last night, which sounds like a bad thing... until you consider that this made me get out of bed at 3:30 a.m. (that's a time! on the clock!) which meant I got to work around 4:30 instead of 5:30. So I got to leave at 1 p.m.! WOO!

I went to a yarn store I hadn't been to before, then went downtown and drank some lemon gingerade Dr. Kefir while knitting in the sunshine for a few hours. Then I met up with a friend I haven't seen in ages, which was wonderful. Finally, I staggered home... getting here just in time to make a quick dinner of whole wheat pasta with (jarred) red sauce, vegan sausage, and spinach. It's not fancy but it was good.

After dinner, the Emperor and I had celebration #7! We made cookies! Making cookies is pretty much his favorite thing on earth (and mine too) and he asks to do it seriously every day. Even at this time of year, when we have so many people we could possibly send cookies to (and these ones are headed right back out of the house, believe me), we can't make cookies EVERY day. So when we do, it's a special treat, both for him and for me.

We made the gingerbread biscotti out of Vegan Cookies Invade Your Cookie Jar. I think I blogged about these last month when I made them... news flash, they're still great. This time I made a little bit extra so that we don't have to mail them ALL away. In fact, I made so much extra that I couldn't fit them all on the baking sheet for the second baking so Josh and I had to eat a few. Namely these ones:

I feel a little bad because the Emperor had to go to bed before he got to try them... on the other hand, he ate his fair share of cookie dough while we were mixing them up so he's probably okay. Here he is using a whisk for the first time I can recall and having quite a bit of fun with it:

  1. I am so happy to hear that you had such a good day yesterday!!! But work at 5:30am typically? Ouch. This is terribly early, Nikki. I used to work the opening shift at Starbuck sat I would have to be there by 4:15am and I though that I would die every morning :) Bless your heart.

  2. Heh. I'm a bit of an early waking insomniac anyhow... so I may as well get in early and get out early!

    Especially right now... it gives me a nice little buffer zone between when I get home and when the Emperor gets home where I can do some chores, make dinner, plan/prepare fun things to do with him... or just slack off for a few hours like yesterday. :D

    also, I agree with Cara - I had no idea that you had to get to work at 5:30 everyday. Girl, that is CRAZY.
